This simple and colorful salad with heart-healthy edamame and dried cranberries rich in antioxidants.
3 cups Frozen Edamame (thawed)
1/2 cup Feta Cheese (crumbled)
1/2 cup Dried Unsweetened Cranberries
1 tbsp Extra Virgin Olive Oil
Sea Salt & Black Pepper (to taste)
Combine edamame, dried unsweetened cranberries in a bowl.
Drizzle with extra virgin olive oil, salt and pepper then topped with feta cheese. Enjoy!
