1 cup Water
3/4 cup Organic Coconut Milk (from the can or carton)
1 cup Jasmine Rice (uncooked, rinsed)
2 cups Black Beans (cooked)
Combine the water, coconut milk and rice in a pot and bring to a boil. Lower the heat to a simmer, cover with a lid and cook for 18 minutes.
Stir in the black beans and cook for 3 to 5 minutes, or until warmed through.
Divide onto plates and enjoy!
