Chickpea Edamame Salad with Lemon & Dill

If you're looking for a healthy and quick meal that will still fill you up and make you feel satisfied, don't look any further.This is just what you need.

Chickpeas are rich in fiber and protein. They also contain several key vitamins and minerals while Edamame is rich in healthy fiber, antioxidants and vitamin K.


½ Lemon (juiced)

1 tbsp Avocado Oil

1 tsp Dijon Mustard

1 tsp Maple Syrup

2 tbsps. Fresh Dill (chopped)

2 cups Baby Spinach (chopped)

1 cup Chickpeas (cooked)

1 cup Frozen Edamame (thawed)


1.In a large mixing bowl, whisk together the lemon juice, avocado oil, dijon, maple syrup and dill.

2.Toss in the spinach, chickpeas and edamame until well combined. Enjoy!
